Italian Meringue Icing

I couldn't remember where I found this recipe on the net but had used this successfully all the time. I have edited this recipe to fit my preference.
To make a successful meringue, make sure your mixing bowl and paddle is clean and grease free. Grease is its enemy. Make sure also you separate the eggwhites and yolk properly. A speck of yolk in the eggwhite can break your heart.
Ingredients:
1 cup superfine sugar (I use regular sugar)
1/3 cup water
5 egg whites, at room temperature (I use just 4 as it is more stable)
1/4 teaspoon cream of tartar
Directions:
In a small pot over low heat, combine sugar and water. Swirl the pot over the burner to dissolve the sugar completely. Do not stir. ( I do not do this, I just let it stand there until it boils but just try it for yourself and see which works best).
Increase the heat to medium and boil to soft-ball stage (235 to 240 degrees). Use a candy thermometer for accuracy. If you don't have a thermometer you can do the thread test (see bottom). It usually takes about 10-15 minutes to reach this stage.
Wash down the inside wall of the pot with a wet pastry brush. This will help prevent sugar crystals from forming around the sides, falling in and causing a chain reaction. (Another thing I don't do.)
While syrup is cooking, prepare your meringue. In the bowl of an electric mixer, whip the eggs whites on low speed until foamy. Add the cream of tartar, increase the speed to medium, and beat until stiff peaks form.
With the mixer running on high, pour the hot sugar syrup in a thin stream over fluffed egg whites. (Make sure you pour the syrup in the space between the side of the bowl & the whisk... do not let the syrup touch the whisk). Beat until the egg whites are stiff and glossy.
Thread test: Do this when syrup starts to look thick already.
Dip the tip of a spoon in the syrup then lift it up just above eye level. Observe the dripping. If you see a long (about a foot) thin thread after the last drop you've reached the right temperature already.

I've tried na po to make boiled icing. 3x that I made syrup puro palpak napaso pa fingetip ko.hehehe. Parang nasusunog nagiging light brown. Then un namang egg white indi sya naging foamy parang puro lang sya small bubbles. But I won't give up. I will try & try until maubos ang egg namin sa ref...Around how many minutes po ba sa mixer bago maging foamy and at what speed? tnx
hello ms.kate do you have a simple cake icing recipe the one's that are in ordinary cakes.i'm a newbie pa kasi in baking kaya ung simple muna ung gusto kong matutunan.thanks alot!
try the butter based icing. they're almost foolproof. it's usually just composed of butter, powdered sugar and a little milk or cream.

Hi Mel, yes it is and it does stay soft. But now I only use the Boiled icing recipe (posted here) since this one has too much eggwhite which deflates after a few hours.
I am not sure how many cups would this yield, I think around 4-5 cups.
tanong ko lang po kung what brand of butter do u use? I feel uncomfortable with expensive total ing. cost ng IMBC if i use expensive butter. I really loves IMBC to apply it on my cake.
the cheapest butter is Magnolia. I use the unsalted one.
Dear Kate, can u post Chiffon Cake recipe so dat i want to learn only from u..I still had terrible with baking chiffon..and let me know what have u experienced..
hi ms.kate! i cant find the link (or was that a link?) you posted. hehe. i am quite assuming. you said po kasi (posted here). i found an italian merigue icing kasi which comes out fluffy and soft but after a while it creates a crust. i remember to have tasted a similar icing at redribbon's cake which came out soft still after a while.
hi ms. kate. this is related to your moist chocolate cake. i have a small cake business. actually its a one woman business. :) and i use your moist chocolate cake recipe. i just wonder if you fill a 9"round pan with the whole recipe or the most with the whole to get a satisfying cake size is an 8 inch round pan. i always. divide the batter since i like it layered. i hope you could help me on this. thank you!

One recipe will make two 9x1 or three 8x1. I don't bake thick cakes too. I have an excel sheet with a computation of how much recipe you need for specific cake sizes. If you want I can send it to you, send me your email address.
This is a boiled icing recipe, but it's not an Italian Meringue. The "Italian" version has a lot of butter (like 2 cups for this amount of egg whites ) added after you add the hot simple syrup. It helps keep it more stable so I find it holds up better than this boiled icing too, without getting that floppy consistency.
But this is my favourite frosting to use and it's very very delicious!

i tried making boiled icing before, what i noticed was after a day (i placed the icing on the cupcakes kept them in a box inside the ref) the syrup was "leaking" i noticed the cupcakes where wet and i noticed galing yung liquid from the icing. why is this? does this mean i under mixed the eggwhites and syrup? how do i know im on the right consistency? how do i know ive overmixed? thanks!!!

just leave it at room temperature. normally when my event is in the morning, I do it the night before. you may try the boiled icing recipe for a more stable icing
